Just the barebones of an idea I had when I woke up: If Bowser can cast magic (and can boss around powerful Magikoopas), why doesn't he disguise a Bob-omb (or something else that kills Mario) as the Princess and trick Mario into touching it?

Probably because he likes the challenge of beating Mario without such cunning tricks.
